Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 4 cups iceberg lettuce, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 bag (9 oz) Doritos, crushed (preferably Nacho Cheese flavor)
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Directions:

  1. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks, about 6-7 minutes. Drain any excess grease.
  2. Add the taco seasoning and water to the beef, stirring to combine. Simmer for 5-6 minutes until the sauce thickens. Remove from heat and set aside.
  3. In a large bowl, toss together the shredded lettuce, cherry tomatoes, red onion, and kidney beans.
  4. Add the cooked beef mixture to the salad, followed by the shredded cheddar cheese and crushed Doritos.
  5. In a small bowl, mix together the sour cream, salsa, and lime juice. Season with salt and pepper to taste.
  6. Drizzle the dressing over the salad and toss everything gently to combine.
  7. Serve immediately for the best crunch, or refrigerate for up to 2 hours before serving.
