Dorito Chicken and Cheese Casserole

Ingredients:

  • 2 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn (thawed)
  • 1 cup diced bell peppers (any color)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups Doritos (crushed, plus extra for topping)
  • Fresh cilantro (for garnish, optional)

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, corn, bell peppers, garlic powder, onion powder, and black pepper. Mix well to combine.
  3. Add the crushed Doritos to the mixture, reserving some for the topping, and stir gently to combine without crushing the chips too much.
  4. Transfer the mixture into the prepared baking dish and spread it out evenly. Top with the remaining crushed Doritos for extra crunch.
  5. Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  6. Remove from the oven and let it cool slightly before serving. Garnish with fresh cilantro if desired.
