This Crazy Good Casserole combines the rich flavors of ground beef, hearty rice, and a creamy, cheesy layer that makes every bite indulgent and satisfying. Topped with crunchy tortilla chips, it’s the perfect balance of creamy, cheesy, and crispy textures.
- Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 cup frozen corn
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 tablespoon chili powder

- 1/2 cup crushed tortilla chips (optional, for topping)
Directions:
- Preheat the oven to 375°F (190°C).

- Stir in the tomato sauce, diced tomatoes, corn, cooked rice, sour cream, chili powder, cumin, salt, and pepper. Mix well and let it simmer for 5-7 minutes to combine the flavors.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- If desired, sprinkle the crushed tortilla chips over the top in the last 5 minutes of baking for a crunchy topping.
- Let it cool for a few minutes before serving.
