Deliciously Savory Crazy Good Casserole

This Crazy Good Casserole combines the rich flavors of ground beef, hearty rice, and a creamy, cheesy layer that makes every bite indulgent and satisfying. Topped with crunchy tortilla chips, it’s the perfect balance of creamy, cheesy, and crispy textures.

  1. Ingredients:
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup crushed tortilla chips (optional, for topping)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and garlic, cooking until the onion is translucent, about 5 minutes. Drain any excess fat.
  3. Stir in the tomato sauce, diced tomatoes, corn, cooked rice, sour cream, chili powder, cumin, salt, and pepper. Mix well and let it simmer for 5-7 minutes to combine the flavors.
  4. Transfer the mixture to a greased 9×13-inch baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  7. If desired, sprinkle the crushed tortilla chips over the top in the last 5 minutes of baking for a crunchy topping.
  8. Let it cool for a few minutes before serving.
