Ingredients:

  • Cookie Dough
    • 2 1/4 cups all-purpose flour

    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1/2 cup brown sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 1/2 cup pumpkin puree
  • Cheesecake Filling
    • 4 oz cream cheese, softened
    • 1/4 cup powdered sugar
    • 1/4 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, vanilla extract, and pumpkin puree until fully combined.
