Ingredients:
- Cookie Dough
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda

- 1 1/2 tsp pumpkin spice
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree

- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 tsp vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice. Set aside.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, vanilla extract, and pumpkin puree until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Set aside.
- In a small bowl, prepare the cheesecake filling by combining cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
