This recipe is not only a time-saver but also a family favorite, perfect for busy weeknights when you want a delicious meal without the hassle of cleanup.

  1. Ingredients:
    • 1 lb chicken breast, diced
    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 1 can (14.5 oz) diced tomatoes
    • 2 cups chicken broth
    • 8 oz penne pasta
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
    • 1 cup grated Parmesan cheese
    • 1 cup shredded mozzarella cheese
    • Fresh basil leaves, for garnish
    Directions:
    1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
    2. In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
    3. Stir in the diced tomatoes, chicken broth, penne pasta, and Italian seasoning. Bring to a boil, then reduce heat to a simmer.
    4. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
    5. Return the cooked chicken to the pot and stir in the Parmesan cheese until melted.
    6. Top with shredded mozzarella cheese, cover, and let sit for 3-4 minutes until the cheese is melted.
    7. Garnish with fresh basil leaves before serving.
