For the Burger Patties:
- 2 cups broccoli florets, steamed and finely chopped
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1/4 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- Salt, to taste
- 1 tablespoon fresh parsley, chopped (optional)
For the Garlic Aioli:
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper, to taste
For the Burger Assembly:
- 4 whole wheat or regular burger buns
- Lettuce leaves
- Sliced tomato
- Pickles (optional)
Directions:
- To make the burger patties, combine the steamed and finely chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, egg, olive oil, garlic powder, onion powder, pepper, and salt in a large bowl. Mix everything together until well combined.
- Divide the mixture into four equal portions and shape them into patties.
- Heat a nonstick skillet or grill pan over medium heat and add a little olive oil. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through.
- While the patties are cooking, prepare the garlic aioli by combining the mayonnaise, olive oil, minced garlic, lemon juice, salt, and pepper in a small bowl. Stir until smooth.
- Once the patties are done, toast the burger buns lightly in the same pan for 1-2 minutes, if desired.
- To assemble the burgers, spread a generous amount of garlic aioli on the bottom half of each bun. Top with a broccoli patty, a lettuce leaf, a slice of tomato, and pickles (if using). Place the top half of the bun on top.
- Serve the broccoli burgers immediately with your favorite side dish.
