Banana Foster French Toast is a showstopper breakfast that combines crispy, golden French toast with rich, caramelized bananas drenched in a rum-infused sauce. The warmth and sweetness of the bananas, complemented by a dusting of cinnamon and a splash of rum, create a heavenly balance of flavors and textures.
Ingredients:
- 4 slices thick-cut bread (Brioche or Challah works best)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter (for frying)
For the Banana Foster Sauce:
- 2 ripe bananas, sliced
- 1/4 cup unsalted butter
- 1/4 cup brown sugar, packed
- 1/4 cup dark rum (or substitute with vanilla extract for a non-alcoholic version)
- 1/4 teaspoon ground cinnamon
- 1 tablespoon heavy cream (optional, for extra richness)
- Pinch of salt
Directions:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon. Set aside.
- Heat a large skillet or griddle over medium heat and melt a tablespoon of butter.
- Dip the slices of bread into the egg mixture, making sure to coat both sides evenly, and place them in the hot skillet.
- Cook the French toast for 2-3 minutes on each side, until golden brown and crisp. Remove from heat and set aside.
- For the banana foster sauce, melt the butter in a separate skillet over medium heat.
- Add the brown sugar and cinnamon, stirring to combine. Once the sugar is melted, add the sliced bananas and cook for 2-3 minutes until they begin to caramelize.
- Carefully add the rum to the skillet (it may flame up, so be cautious), and stir to combine. Allow the sauce to simmer for 2 minutes. If using, add heavy cream for a richer texture, then stir again.
- Spoon the caramelized banana foster sauce over the cooked French toast.
- Serve immediately, topped with additional banana slices and a dusting of powdered sugar, if desired.
