Banana Foster French Toast

Banana Foster French Toast is a showstopper breakfast that combines crispy, golden French toast with rich, caramelized bananas drenched in a rum-infused sauce. The warmth and sweetness of the bananas, complemented by a dusting of cinnamon and a splash of rum, create a heavenly balance of flavors and textures.

Ingredients:

  • 4 slices thick-cut bread (Brioche or Challah works best)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter (for frying)

For the Banana Foster Sauce:

  • 2 ripe bananas, sliced
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar, packed
  • 1/4 cup dark rum (or substitute with vanilla extract for a non-alcoholic version)
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon heavy cream (optional, for extra richness)
  • Pinch of salt

Directions:

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon. Set aside.
  2. Heat a large skillet or griddle over medium heat and melt a tablespoon of butter.
  3. Dip the slices of bread into the egg mixture, making sure to coat both sides evenly, and place them in the hot skillet.
  4. Cook the French toast for 2-3 minutes on each side, until golden brown and crisp. Remove from heat and set aside.
  5. For the banana foster sauce, melt the butter in a separate skillet over medium heat.
  6. Add the brown sugar and cinnamon, stirring to combine. Once the sugar is melted, add the sliced bananas and cook for 2-3 minutes until they begin to caramelize.
  7. Carefully add the rum to the skillet (it may flame up, so be cautious), and stir to combine. Allow the sauce to simmer for 2 minutes. If using, add heavy cream for a richer texture, then stir again.
  8. Spoon the caramelized banana foster sauce over the cooked French toast.
  9. Serve immediately, topped with additional banana slices and a dusting of powdered sugar, if desired.
