Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup shredded sharp cheddar cheese
- 1 cup crushed Ritz crackers or breadcrumbs
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 large eggs
- ¼ cup milk
- 2 tbsp olive oil
Directions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a shallow bowl, mix the crushed crackers, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- In a separate bowl, whisk together the eggs and milk.
- Dip each chicken breast into the egg mixture, allowing the excess to drip off. Then coat the chicken thoroughly with the cracker and cheese mixture.
- Heat the olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking sheet. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Serve warm with your favorite dipping sauce or a side of roasted vegetables.
