Crunchy Cheddar-Coated Chicken Delight

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crushed Ritz crackers or breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs
  • ¼ cup milk
  • 2 tbsp olive oil

Directions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a shallow bowl, mix the crushed crackers, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  3. In a separate bowl, whisk together the eggs and milk.
  4. Dip each chicken breast into the egg mixture, allowing the excess to drip off. Then coat the chicken thoroughly with the cracker and cheese mixture.
  5. Heat the olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown.
  6. Transfer the chicken to the prepared baking sheet. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Serve warm with your favorite dipping sauce or a side of roasted vegetables.
