These Crumbl Pumpkin Pie Cookies combine all the beloved flavors of classic pumpkin pie in a portable, bite-sized dessert. The soft, buttery cookie base pairs perfectly with the rich pumpkin filling, topped off with a light whipped cream. Each bite offers the warmth of cinnamon, nutmeg, and a hint of ginger, creating a comforting autumn treat.
Ingredients:
- Cookie Base
- 1 cup unsalted butter, softened
 - 1 cup granulated sugar
 - 1 large egg
 - 1 tsp vanilla extract
 - 2 1/2 cups all-purpose flour
 - 1/2 tsp baking powder
 - 1/2 tsp salt
 - 1 tsp cinnamon
 - 1/2 tsp nutmeg
 
 - Pumpkin Filling
- 1 cup canned pumpkin puree
 - 1/2 cup brown sugar
 - 1/2 tsp cinnamon
 - 1/4 tsp nutmeg
 - 1/4 tsp ginger
 - 1/2 cup heavy cream
 
 - Whipped Topping
- 1 cup heavy whipping cream
 - 2 tbsp powdered sugar
 - 1/2 tsp vanilla extract
 
 
Directions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
 - In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
 - In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
 - Roll dough into 1.5-inch balls and flatten slightly to form a cookie base. Place on the prepared baking sheet, spacing them 2 inches apart.
 - Bake for 10-12 minutes or until edges are set but centers are soft. Let cookies cool completely on a wire rack.
 - For the filling, combine pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger in a saucepan. Cook over medium heat for 5-7 minutes, stirring frequently, until thickened. Remove from heat, stir in heavy cream, and let cool.
 - For the whipped topping, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
 - Assemble by spooning pumpkin filling onto each cookie, spreading to cover. Top with a dollop of whipped cream. Serve chilled or at room temperature.
