Crock Pot Crack Potato Soup

Ingredients:

  • 6 large russet potatoes, peeled and diced
  • 8 oz cream cheese, softened
  • 1 can (10.5 oz) cream of chicken soup
  • 4 cups chicken broth
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste

Directions:

  1. Add diced potatoes, cream of chicken soup, chicken broth, and ranch seasoning mix to the crock pot.
  2. Cook on low for 6-7 hours, or until potatoes are tender.
  3. Use a potato masher or immersion blender to slightly mash the potatoes to your desired consistency.
  4. Stir in cream cheese and shredded cheddar cheese until melted and well-combined.
  5. Add bacon bits and season with salt and pepper to taste.
  6. Serve topped with green onions and additional bacon, if desired.
