  1. Ingredients:
    • 1 loaf (about 8 cups) day-old bread, cubed (use a rustic or sourdough bread)
    • 1/2 cup unsalted butter
    • 1 small onion, finely chopped
    • 2 celery stalks, finely chopped
    • 2 cloves garlic, minced
    • 1/4 cup fresh parsley, chopped
    • 1 tablespoon fresh sage, chopped
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 large eggs, beaten
    • 1/2 cup chicken broth (or vegetable broth for a vegetarian version)
    • 1 cup shredded mozzarella cheese (optional, for added richness)

    Directions:
    1. Preheat your oven to 375°F (190°C). Grease a baking sheet with olive oil or line it with parchment paper.
