Crispy Ritz Cracker Chicken

  1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 cup crushed Ritz crackers
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat your oven to 375°F (190°C) and grease a baking sheet or line it with parchment paper.
  2. In a shallow bowl, mix together the crushed Ritz crackers, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper.
  3. In another bowl, whisk together the eggs and milk until well combined.
  4. Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it in the cracker mixture, pressing gently to ensure an even coating.
  5. Place the coated chicken breasts on the prepared baking sheet. Drizzle the melted butter over the top of each piece for extra crispiness.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
