These Cheesy Potato Burritos are a warm, comforting dish that brings together the creamy richness of melted cheese with the crispy, seasoned potatoes. The tangy salsa and smooth sour cream add a perfect contrast to the richness, making every bite a satisfying experience.

  1. Ingredients:
  • 4 large flour tortillas
  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa (mild or spicy)
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 cup lettuce, shredded (optional)
  • 1/2 cup diced tomatoes (optional)

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the diced potatoes and season with garlic powder, onion powder, chili powder, salt, and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside.
  2. While the potatoes cook, warm the tortillas in a dry skillet over medium heat for 1-2 minutes on each side, or until pliable.
  3. Once the potatoes are cooked, remove them from the skillet and set aside. In the same skillet, place the tortillas.
  4. On each tortilla, spoon a generous amount of the seasoned potatoes, and top with shredded cheddar cheese. Return the tortillas to the skillet and cook for another 2-3 minutes on each side until the cheese melts and the tortillas are lightly toasted.
  5. Remove from the skillet and add a dollop of sour cream, a spoonful of salsa, and a sprinkle of fresh cilantro and diced tomatoes, if desired.
  6. Fold the sides of the tortilla over the filling, then roll up the burrito tightly, making sure the filling stays inside. Serve immediately.
