- Ingredients:
- 4 large flour tortillas
- 4 medium potatoes, peeled and diced
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa (mild or spicy)
- 1/4 cup fresh cilantro, chopped (optional)
- 1 cup lettuce, shredded (optional)
- 1/2 cup diced tomatoes (optional)
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the diced potatoes and season with garlic powder, onion powder, chili powder, salt, and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside.
- While the potatoes cook, warm the tortillas in a dry skillet over medium heat for 1-2 minutes on each side, or until pliable.
- Once the potatoes are cooked, remove them from the skillet and set aside. In the same skillet, place the tortillas.
- On each tortilla, spoon a generous amount of the seasoned potatoes, and top with shredded cheddar cheese. Return the tortillas to the skillet and cook for another 2-3 minutes on each side until the cheese melts and the tortillas are lightly toasted.
- Remove from the skillet and add a dollop of sour cream, a spoonful of salsa, and a sprinkle of fresh cilantro and diced tomatoes, if desired.
- Fold the sides of the tortilla over the filling, then roll up the burrito tightly, making sure the filling stays inside. Serve immediately.
