Golden Crispy Chicken with Parmesan Mushroom Sauce is a dish that combines the best of both worlds—crispy, perfectly breaded chicken paired with a rich, creamy Parmesan sauce. The sautéed mushrooms add an earthy depth to the sauce, which envelops each piece of chicken in a savory blanket of flavor.
- Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 3 tablespoons olive oil
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- 8 oz mushrooms, sliced
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat the oven to 375°F (190°C).
- In a shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, and pepper.
- In another dish, beat the eggs. In a third dish, place the breadcrumbs.
- Dredge each chicken breast in the flour mixture, dip in the beaten eggs, and then coat in the breadcrumbs.
- Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, until golden brown and crispy. Transfer the chicken to a baking dish and finish baking in the preheated oven for 15-20 minutes, or until cooked through (internal temperature should reach 165°F/75°C).
- While the chicken is baking, prepare the mushroom sauce. In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until they are soft and browned.
- Add the chicken broth to the skillet and bring it to a simmer. Cook for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, Parmesan cheese, and dried thyme, and cook for another 3-4 minutes, until the sauce is thickened and creamy. Season with salt and pepper to taste.
- Once the chicken is done, place each piece on a plate and generously spoon the creamy Parmesan mushroom sauce over the top. Garnish with fresh parsley and serve immediately.
