Crispy Cheddar Ritz Cracker Chicken

  1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 sleeve Ritz crackers, crushed
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons melted butter

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a shallow bowl, combine the crushed Ritz crackers and shredded cheddar cheese.
  3. In a separate bowl, mix mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  4. Spread the mayo mixture evenly over both sides of each chicken breast.
  5. Press each chicken breast into the cracker and cheese mixture, coating evenly.
  6. Place the coated chicken breasts in a greased baking dish.
  7. Drizzle melted butter over the top of each chicken breast.
  8. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.
