Crispy Cannoli-Inspired Cookies

Cannoli Cookies combine the best parts of the classic cannoli dessert with the ease of a cookie. The creamy ricotta cheese filling and mini chocolate chips give them a delightful flavor that’s rich yet perfectly balanced by the light, crisp texture.

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/2 cup ricotta cheese, drained
  • Powdered sugar for dusting

Directions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the flour, sugar, cinnamon, and a pinch of salt.
  3. Add the softened butter, egg, and vanilla extract to the dry ingredients, and mix until a dough forms.
  4. Stir in the ricotta cheese until evenly combined, followed by the mini chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on a wire rack.
  8. Once cooled, dust the cookies with powdered sugar before serving.
