Ingredients:
For the Chicken Filling:
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup chicken broth or water
- 1 tablespoon lime juice
For the Tacos:
- 12 small soft corn tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream or Greek yogurt
- Hot sauce, for drizzling (optional)
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts or thighs and season with cumin, chili powder, paprika, garlic powder, cayenne pepper, onion powder, oregano, salt, and pepper. Sear the chicken on both sides until golden brown, about 5 minutes per side.
- Add chicken broth or water to the skillet, then cover and reduce the heat to medium-low. Simmer for 10-12 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 75°C).
- Remove the chicken from the skillet, shred it using two forks, and return it to the skillet with the cooking juices. Stir in the lime juice, adjust seasoning if needed, and remove from heat.
- In a separate skillet, lightly warm the tortillas for a few seconds on each side, just to make them more pliable.
- Arrange the tortillas in a baking dish or on a baking sheet. Spoon the shredded spicy chicken mixture evenly into each tortilla.
- Sprinkle the shredded cheddar cheese over the chicken-filled tortillas.
