Crispy Bacon & Creamy Guacamole Grilled Cheese

Ingredients:

  • 4 slices of sourdough or whole grain bread
  • 1/2 cup guacamole (store-bought or homemade)
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon
  • 1 tablespoon butter, softened
  • Optional: 1/4 teaspoon chili flakes for a spicy kick

Directions:

  1. Heat a skillet over medium heat.
  2. Spread guacamole evenly on two slices of bread.
  3. Top the guacamole with two slices of cooked bacon on each slice, then sprinkle with shredded cheddar cheese.
  4. Place the other slices of bread on top to form sandwiches.
  5. Spread butter on the outer sides of each sandwich.
  6. Place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
  7. Remove from skillet, slice in half, and serve hot.
