This Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce is a cozy, comforting pasta dish that’s bursting with flavor. The rich, creamy sauce is infused with sun-dried tomatoes and garlic, creating a bold and savory flavor that clings to each strand of spaghetti. Fresh spinach adds a touch of green and a burst of nutrients, balancing the richness of the sauce.
Ingredients:
- Pasta and Spinach
- 12 oz spaghetti
- 4 cups fresh spinach, roughly chopped
- Sun-Dried Tomato Cream Sauce
- 2 tbsp olive oil (or oil from sun-dried tomato jar)
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
- Garnish
- Fresh basil leaves, chopped
- Extra Parmesan cheese, for serving
Directions:
- Cook spaghetti according to package instructions in a pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat olive oil over medium heat. Add the sun-dried tomatoes and garlic, sautéing for 2-3 minutes until fragrant.
- Reduce the heat to low and pour in the heavy cream. Stir well, then add the Parmesan cheese, stirring until it melts and the sauce thickens slightly. Season with salt, pepper, and red pepper flakes if desired.
- Add the cooked spaghetti and spinach to the skillet, tossing well to coat the pasta in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until it reaches your desired consistency.
- Serve hot, garnished with fresh basil and extra Parmesan cheese.
