- Ingredients:
- 12 oz pasta (penne or rotini works best)
- 1 (10 oz) can of Rotel diced tomatoes with green chilies
- 1 (8 oz) block of cream cheese, softened
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1/2 pound ground beef or chicken (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Directions:
- Cook the pasta according to package instructions. Drain and set aside.
- If using ground beef or chicken, heat olive oil in a large skillet over medium heat. Add the meat and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat and set aside.
- In the same skillet, add the cream cheese, heavy cream, garlic powder, onion powder, and Rotel tomatoes (with juice). Stir until the cream cheese is melted and the mixture is smooth.
- Add the cooked meat (if using), shredded cheddar cheese, and mozzarella cheese. Stir until the cheese is melted and the sauce becomes creamy.
- Add the cooked pasta to the skillet, stirring to coat it in the cheesy sauce. Season with salt and pepper to taste.
- Garnish with fresh cilantro, if desired, and serve immediately.
