Creamy Ricotta Beef Stuffed Shells Pasta

  1. Ingredients:
  • 24 jumbo pasta shells
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh basil, chopped (for garnish)

Directions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the jumbo shells according to the package instructions until al dente. Drain and rinse with cold water to stop cooking.
  3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, cooking until soft (about 2-3 minutes).
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat, then stir in 1/2 cup marinara sauce, salt, pepper, and Italian seasoning. Set aside.
  5. In a mixing bowl, combine ricotta, egg, Parmesan, and 1/2 cup mozzarella. Mix well.
  6. Stuff each shell with a spoonful of the ricotta mixture and a bit of the beef filling. Place stuffed shells in the prepared baking dish.
  7. Pour the remaining marinara sauce evenly over the shells. Top with the remaining mozzarella.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until the cheese is bubbly and lightly golden.
  9. Garnish with fresh basil before serving.
