Creamy Ricotta Beef Stuffed Shells

Ingredients:

  • 20 jumbo pasta shells
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil for garnish (optional)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo shells according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, sauté the onion and garlic until softened. Add the ground beef, cooking until browned. Season with salt and pepper. Drain excess fat.
  4. In a large bowl, combine the cooked beef mixture, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, Italian seasoning, and additional salt and pepper. Mix until well combined.
  5. Spread 1 cup of marinara sauce on the bottom of a 9×13-inch baking dish.
  6. Stuff each cooked shell with the beef and ricotta mixture and place in the baking dish.
  7. Pour the remaining marinara sauce over the stuffed shells and sprinkle with the remaining mozzarella cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. Garnish with fresh basil before serving.
