- 4 boneless, skinless chicken breasts

- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
- 1/4 cup ranch dressing (for topping)
- Chopped parsley (for garnish)
Directions:
- Preheat the oven to 400°F (200°C).
- Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of Parmesan, breadcrumbs, garlic powder, and paprika.
- Dredge each chicken breast in flour, dip in eggs, and coat with the Parmesan-breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat. Sear each chicken breast for 2-3 minutes per side, until golden brown.
- Transfer the chicken to a baking sheet, top each piece with mozzarella, and bake for 10-12 minutes, or until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
- Drizzle with ranch dressing and garnish with parsley before serving.
