Longhorn Steakhouse Parmesan Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian-style breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing (for topping)
  • Chopped parsley (for garnish)

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season with salt and pepper.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of Parmesan, breadcrumbs, garlic powder, and paprika.
  4. Dredge each chicken breast in flour, dip in eggs, and coat with the Parmesan-breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium heat. Sear each chicken breast for 2-3 minutes per side, until golden brown.
  6. Transfer the chicken to a baking sheet, top each piece with mozzarella, and bake for 10-12 minutes, or until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
  7. Drizzle with ranch dressing and garnish with parsley before serving.
