Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 12 ounces penne pasta
- 3 cups chicken broth
- 1 cup marinara sauce
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, chopped (for garnish)
Directions:
- In a large pot, heat olive oil over medium heat. Add the chicken pieces, season with Italian seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the minced garlic and sauté for 1 minute until fragrant.
- Add the penne pasta, chicken broth, and marinara sauce. Stir to combine, bringing the mixture to a boil.
- Reduce heat to a simmer and cover, cooking for about 12-15 minutes or until the pasta is al dente, stirring occasionally.
- Once the pasta is cooked, stir in the heavy cream, cooked chicken, mozzarella, and Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
- Garnish with fresh basil before serving.
