Creamy One-Pot Chicken Parmesan Delight

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 12 ounces penne pasta
  • 3 cups chicken broth
  • 1 cup marinara sauce
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Directions:

  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces, season with Italian seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the penne pasta, chicken broth, and marinara sauce. Stir to combine, bringing the mixture to a boil.
  4. Reduce heat to a simmer and cover, cooking for about 12-15 minutes or until the pasta is al dente, stirring occasionally.
  5. Once the pasta is cooked, stir in the heavy cream, cooked chicken, mozzarella, and Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  6. Garnish with fresh basil before serving.
