Zuppa Toscana is a hearty Italian-inspired soup that brings together the richness of Italian sausage, the creamy goodness of potatoes, and the subtle bitterness of kale or spinach. This classic combination of flavors is elevated with a touch of garlic and onion, making each spoonful warm and satisfying.

Ingredients:

  • 1 lb Italian sausage (mild or spicy), crumbled
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium russet potatoes, thinly sliced
  • 1 cup heavy cream
  • 3 cups kale or spinach, chopped
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for heat)

Directions:

  1. In a large pot over medium heat, cook the bacon until crispy. Remove with a slotted spoon and set aside.
  2. Add the crumbled sausage to the pot and cook until browned. Remove the sausage and set aside with the bacon, leaving the drippings in the pot.
  3. Add diced onion to the pot and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  4. Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. Stir in the cooked sausage, bacon, and chopped kale or spinach. Simmer for 5 minutes, then stir in the heavy cream. Season with salt, black pepper, and red pepper flakes if desired.
  6. Serve hot, garnished with extra bacon or freshly grated Parmesan if desired.
