  • 8 oz penne pasta (or your favorite pasta)
  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish)

Directions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 2-3 minutes until fragrant.
  4. Stir in the heavy cream and Italian seasoning, bringing the mixture to a gentle simmer.
