- Creamy Chicken Tuscan Pasta
- Ingredients:
- 8 oz penne pasta (or your favorite pasta)
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil, chopped (for garnish)
Directions:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 2-3 minutes until fragrant.
- Stir in the heavy cream and Italian seasoning, bringing the mixture to a gentle simmer.
- Add the cooked chicken back into the skillet, along with the spinach and Parmesan cheese. Cook until the spinach wilts and the sauce thickens slightly, about 3-5 minutes.
- Toss the cooked pasta in the creamy sauce until well coated.
- Serve hot, garnished with fresh basil and additional Parmesan cheese if desired.
