Creamy Chicken Casserole

  1. Ingredients:
  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix ingredients: In a large bowl, combine the shredded chicken, uncooked rice, chicken broth, cream of chicken soup, sour cream, mixed vegetables, garlic powder, onion powder, paprika, salt, and pepper. Mix well until everything is evenly combined.
  3. Pour into the dish: Transfer the mixture to the prepared baking dish, spreading it out evenly.
  4. Bake: Cover with aluminum foil and bake for 45 minutes. Then remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  5. Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
