Creamy Baked Onions with Asiago Cheese

Creamy Baked Onions with Asiago Cheese are a perfect blend of savory, cheesy goodness. The tender, caramelized onions are filled with a luscious, creamy mixture of Asiago and Parmesan cheese, which becomes rich and bubbly as it bakes to perfection. The crispy breadcrumb topping adds an irresistible crunch, making this dish a comforting yet elegant side for any meal.

  1. Ingredients:
  • 4 medium-sized yellow onions
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/4 cup grated Asiago cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • Salt to taste
  • 2 tablespoons fresh thyme leaves
  • 1/2 cup breadcrumbs (preferably panko for crunch)
  • Fresh parsley for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Peel the onions and slice off the tops. Cut a small slice off the bottom of each onion so they sit flat. Hollow out the center of the onions, leaving about 1/2-inch of the outer layers intact.
  3. Drizzle olive oil into a baking dish and place the hollowed onions in the dish.
  4. In a bowl, mix the heavy cream, Asiago cheese, Parmesan cheese, garlic powder, black pepper, and salt.
  5. Spoon the creamy cheese mixture into the hollowed-out onions, filling them generously.
  6. Sprinkle the breadcrumbs on top of each onion and drizzle with a little extra olive oil.
  7. Bake for 30-35 minutes, or until the onions are tender and the cheese is bubbly and golden brown on top.
  8. Remove from the oven and sprinkle fresh thyme leaves and parsley over the top before serving.
