Creamy Alfredo Lasagna Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 lb Italian sausage (mild or spicy)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (8 oz) package lasagna noodles, broken into pieces
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • Salt to taste
  • 2 cups spinach (optional)
  • Fresh basil and extra Parmesan for garnish

Directions:

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned. Drain any excess fat.
  2. Add the diced onion and garlic, sautéing for 3-4 minutes until soft.
  3. Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles and cook until tender, about 8-10 minutes.
  4. Reduce heat to low, stir in the heavy cream, Parmesan cheese, Italian seasoning, pepper, and salt. Simmer for 5 minutes, stirring occasionally.
  5. Add the spinach (if using) and stir until wilted.
  6. Just before serving, spoon a dollop of ricotta into each bowl. Garnish with fresh basil and extra Parmesan.
