Ingredients:
- 2 tablespoons olive oil
- 1 lb Italian sausage (mild or spicy)
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 (8 oz) package lasagna noodles, broken into pieces
- 1 cup grated Parmesan cheese
- 1 cup ricotta cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon black pepper
- Salt to taste
- 2 cups spinach (optional)
- Fresh basil and extra Parmesan for garnish
Directions:
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned. Drain any excess fat.
- Add the diced onion and garlic, sautéing for 3-4 minutes until soft.
- Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles and cook until tender, about 8-10 minutes.
- Reduce heat to low, stir in the heavy cream, Parmesan cheese, Italian seasoning, pepper, and salt. Simmer for 5 minutes, stirring occasionally.
- Add the spinach (if using) and stir until wilted.
- Just before serving, spoon a dollop of ricotta into each bowl. Garnish with fresh basil and extra Parmesan.
