- Ingredients:
For the Muffins:- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup finely grated carrots (about 1 medium carrot)
- 1/2 cup finely grated zucchini (about 1 medium zucchini)
- 1/2 cup peeled and grated apple (about 1 medium apple)
- 1/2 cup chopped walnuts or pecans (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.
- In a large mixing bowl, whisk together both flours, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In another bowl, beat the eggs, granulated sugar, and brown sugar together until smooth. Add the oil and vanilla extract, and mix until well combined.
- Stir in the grated carrots, zucchini, and apple until evenly distributed in the batter.
- Gradually fold in the dry ingredients into the wet mixture until just combined. If using, gently fold in the chopped walnuts or pecans.
- Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of the muffins comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
- While the muffins are cooling, prepare the cream cheese frosting. Beat the softened cream cheese and butter together in a bowl until smooth. Gradually add powdered sugar, vanilla extract, and a pinch of salt, mixing until the frosting is light and fluffy.
- Once the muffins have cooled completely, spread a generous layer of cream cheese frosting on top of each muffin. Garnish with additional chopped walnuts or a sprinkle of cinnamon if desired.
