Crazy Crust Pie

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fruit filling (cherry, blueberry, or peach)

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the melted butter, milk, eggs, and vanilla extract to the dry ingredients. Mix until well combined and smooth.
  4. Pour the batter into the prepared pie pan.
  5. Spoon the fruit filling evenly over the top of the batter. Do not stir; the filling will sink into the batter while baking.
  6. Bake for 45-50 minutes, or until the pie is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the pie to cool before slicing and serving.
