This Cranberry Jello Salad with Cream Cheese Topping is a delightful combination of tangy cranberries and creamy, sweet cheese that’s perfect for any festive gathering. The gelatin base offers a refreshing texture, while the rich cream cheese topping adds an indulgent, velvety finish.
- Ingredients:
For the Jello Salad:
- 1 package (6 oz) cranberry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 1/2 cup fresh cranberries, chopped
- 1/2 cup pecans or walnuts, chopped (optional)
- 1/2 cup diced apples (optional)
For the Cream Cheese Topping:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
Directions:
- In a medium bowl, dissolve the cranberry gelatin in 1 cup of boiling water. Stir until fully dissolved.
- Add 1 cup of cold water and mix well. Pour the gelatin mixture into a 9×9-inch or similar-sized dish.
- Stir in the chopped cranberries, nuts, and apples (if using). Place the dish in the refrigerator and let it set for about 2-3 hours, or until firm.
- While the gelatin sets, prepare the cream cheese topping: In a separate bowl, beat the softened cream cheese with powdered sugar, sour cream, and vanilla extract until smooth and creamy.
- Once the gelatin has set, spread the cream cheese topping evenly over the top of the Jello.
- Return the dish to the refrigerator and chill for another 1-2 hours to allow the topping to firm up.
- Serve chilled, garnished with extra chopped cranberries or nuts, if desired.
