Country Ranch Green Beans and Potatoes with Bacon

Ingredients:

  • 1 lb fresh green beans, trimmed
  • 1 1/2 lbs baby potatoes, halved
  • 6 slices bacon, chopped
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt (optional)
  • 1/4 cup grated Parmesan (optional for garnish)

Directions:

  1. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for 10-12 minutes until tender. Drain and set aside.
  2. In the same pot, add the trimmed green beans and blanch them for 3-4 minutes until they are bright green. Drain and set aside.
  3. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate, leaving the bacon grease in the skillet.
  4. Add the olive oil to the skillet along with the potatoes and green beans. Sauté for 5-7 minutes, stirring occasionally, until they are lightly browned.
  5. Sprinkle in the ranch seasoning mix, garlic powder, black pepper, and salt. Stir well to coat the vegetables evenly.
  6. Add the crispy bacon back to the skillet and toss everything together.
  7. Transfer to a serving dish and garnish with grated Parmesan if desired. Serve warm.
