Ingredients:
- 1 lb fresh green beans, trimmed
- 1 1/2 lbs baby potatoes, halved
- 6 slices bacon, chopped
- 1 packet (1 oz) ranch seasoning mix
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt (optional)
- 1/4 cup grated Parmesan (optional for garnish)
Directions:
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for 10-12 minutes until tender. Drain and set aside.
- In the same pot, add the trimmed green beans and blanch them for 3-4 minutes until they are bright green. Drain and set aside.
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate, leaving the bacon grease in the skillet.
- Add the olive oil to the skillet along with the potatoes and green beans. Sauté for 5-7 minutes, stirring occasionally, until they are lightly browned.
- Sprinkle in the ranch seasoning mix, garlic powder, black pepper, and salt. Stir well to coat the vegetables evenly.
- Add the crispy bacon back to the skillet and toss everything together.
- Transfer to a serving dish and garnish with grated Parmesan if desired. Serve warm.
