Ingredients:

  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/4 cup green onions (chopped, optional)
  • 1/2 cup milk
  • 2 large eggs
  • Oil (for frying)

Instructions:

  1. Prepare the Corn:
    • If using canned corn, drain and rinse it. If using frozen corn, thaw it and drain any excess liquid.
  2. Make the Batter:
    • In a large bowl, combine the flour, baking powder, salt, black pepper, and paprika (if using). Mix well.
    • In another bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  3. Add the Corn:
    • Fold in the corn kernels and green onions (if using) until evenly distributed in the batter.
  4. Heat the Oil:
    • In a large skillet, heat about 1/4 inch of oil over medium heat.
  5. Fry the Fritters:
    • Once the oil is hot, drop spoonfuls of the corn batter into the skillet, flattening them slightly with the back of the spoon.
    • Fry for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan; fry in batches if necessary.
  6. Drain:
    • Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
