Ingredients:
- 1 ½ lbs white fish fillets (cod, haddock, or pollock)
- 1 ½ cups all-purpose flour
- ½ cup cornstarch
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp sugar
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 cup cold club soda (or cold sparkling water)
- Vegetable oil, for frying
Directions:
- Pat the fish fillets dry with paper towels. Cut them into manageable portions if needed and set aside.
- In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, onion powder, and garlic powder.
- Gradually pour in the cold club soda, whisking until a smooth batter forms. The batter should be thick enough to coat the fish but still pourable. If too thick, add a bit more club soda.
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Dip each fish fillet into the batter, ensuring it is well-coated, and let any excess batter drip off.
- Carefully place the fish into the hot oil, frying 2-3 pieces at a time. Fry for 3-4 minutes per side, or until the batter is golden brown and crispy.
- Transfer the fish to a paper towel-lined plate to drain excess oil.
- Serve hot with tartar sauce, lemon wedges, and fries.
