  1. Ingredients:
  • 1 tablespoon olive oil

  • 2 celery stalks, chopped
  • 1 pound boneless, skinless chicken breast or thighs, cubed
  • 6 cups chicken broth
  • 1 cup whole milk (or heavy cream for extra richness)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk (for the dumplings)
  • Fresh parsley for garnish

Directions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
