- Ingredients:
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup refried beans
- 2 cups shredded iceberg lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup sliced black olives (optional)
- 1/4 cup fresh cilantro, chopped
- Tortilla chips, crushed (for garnish)
- 1 avocado, sliced (optional)
Directions:
- In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain any excess fat, then stir in the taco seasoning and a little water (about 1/4 cup). Simmer for 5 minutes, then remove from heat.
- In a large serving dish or bowl, layer the ingredients in the following order:
- Start with a layer of refried beans at the bottom.
- Add a layer of seasoned ground beef.
- Next, layer the shredded lettuce.
- Add a layer of halved cherry tomatoes and red onion.
- Spread the shredded cheddar cheese evenly on top.
- Spoon the sour cream and salsa over the cheese.
- Finally, garnish with black olives, fresh cilantro, crushed tortilla chips, and avocado slices (if using).
- Serve immediately with extra salsa and tortilla chips on the side.
