Ingredients:
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup cocoa powder
- 1 tablespoon instant coffee granules
- 2 tablespoons hot water
- 1/2 cup chocolate chips, melted
Directions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, dissolve the instant coffee granules in the hot water. Set aside.
- In a large mixing bowl, beat the butter and cream cheese together until smooth and creamy.
- Add the sugar and beat until light and fluffy. Mix in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix until combined.
- Divide the dough into two equal parts. To one half, add the cocoa powder and melted chocolate, mixing until well combined. To the other half, add the dissolved coffee and stir until fully incorporated.
- Take portions of each dough and lightly press them together, rolling them into balls. Place them on the prepared baking sheet, then gently flatten each cookie slightly.
- Bake for 10-12 minutes, or until the edges are set. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
