Homemade Beefaroni is a nostalgic dish that combines the heartiness of ground beef with tender pasta in a rich, savory sauce. This one-pot meal is perfect for busy weeknights, offering a satisfying and delicious option for the whole family.
Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) tomato sauce
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
- In a large skillet or pot, cook the ground beef over medium heat until browned. Drain excess fat, then add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Stir in the tomato sauce, diced tomatoes (with juices), beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
- Add the elbow macaroni to the pot and reduce the heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed.
- Remove from heat and stir in half of the cheddar cheese until melted.
- Serve hot, garnished with the remaining cheese and fresh parsley.
