Classic Beef and Pasta Casserole

Homemade Beefaroni is a nostalgic dish that combines the heartiness of ground beef with tender pasta in a rich, savory sauce. This one-pot meal is perfect for busy weeknights, offering a satisfying and delicious option for the whole family.

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)
Directions:
  1. In a large skillet or pot, cook the ground beef over medium heat until browned. Drain excess fat, then add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  2. Stir in the tomato sauce, diced tomatoes (with juices), beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  3. Add the elbow macaroni to the pot and reduce the heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed.
  4. Remove from heat and stir in half of the cheddar cheese until melted.
  5. Serve hot, garnished with the remaining cheese and fresh parsley.
