Ingredients:
- 4 cups cubed bread (French or challah works best)
- 4 large eggs
- 1 cup milk
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 tsp cinnamon (for topping)
Directions:
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
- Add the cubed bread to the mixture, gently folding to ensure all the bread is soaked.
- Let the mixture sit for 10-15 minutes to allow the bread to absorb the liquid.
- In a separate bowl, combine the melted butter, brown sugar, and 1 tsp of cinnamon.
- Divide the soaked bread mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Drizzle the brown sugar mixture over the top of each muffin.
- Bake for 20-25 minutes, or until the tops are golden brown and the muffins are set.
- Allow to cool for a few minutes before removing from the tin. Serve warm and enjoy!
