Cinnamon Sugar French Toast Muffins

Ingredients:

  • 4 cups cubed bread (French or challah works best)
  • 4 large eggs
  • 1 cup milk
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 tsp cinnamon (for topping)

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  3. Add the cubed bread to the mixture, gently folding to ensure all the bread is soaked.
  4. Let the mixture sit for 10-15 minutes to allow the bread to absorb the liquid.
  5. In a separate bowl, combine the melted butter, brown sugar, and 1 tsp of cinnamon.
  6. Divide the soaked bread mixture evenly into the muffin tin, filling each cup about 3/4 full.
  7. Drizzle the brown sugar mixture over the top of each muffin.
  8. Bake for 20-25 minutes, or until the tops are golden brown and the muffins are set.
  9. Allow to cool for a few minutes before removing from the tin. Serve warm and enjoy!
