For the Cobbler:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar, packed
For the Cinnamon Sugar Topping:
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter, melted
Directions:
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or a similar-sized casserole dish.
- In a medium-sized bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon.
- Pour in the melted butter, milk, and vanilla extract, then stir until just combined. The batter will be thick, but that’s okay!
- Spread the batter evenly into the prepared baking dish.
- In a separate small bowl, mix the brown sugar with the cinnamon-sugar topping ingredients (granulated sugar, cinnamon, and melted butter). Pour this mixture evenly over the batter, making sure to cover the entire surface.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let it cool for 10-15 minutes before serving. The cobbler will be slightly gooey and deliciously warm.
- Serve as is or with a scoop of vanilla ice cream for extra indulgence!
