Christmas Cranberry Loaf

  1. Ingredients:
    • 2 cups all-purpose flour
    • 1 cup fresh or frozen cranberries, chopped
    • 1 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1/2 cup orange juice
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • Zest of one orange
    Directions:
    1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
    2. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
    3. Add the eggs, orange juice, vanilla extract, and orange zest to the butter mixture, mixing well to combine.
    4. In a separate bowl, whisk together the flour, baking soda, and salt.
    5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
    6. Fold in the chopped cranberries gently, being careful not to overmix.
    7. Pour the batter into the prepared loaf pan and smooth the top.
    8. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
    9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
