Ingredients:
1 1/2 cups chocolate cookie crumbs
1/4 cup melted butter
2 cups cherries, pitted and halved
1/4 cup sugar (for cherries)
3 tablespoons water
1 teaspoon cornstarch
3 packages (8 ounces each) cream cheese, softened
1 cup sugar (for cheesecake)
3 eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 325°F (160°C). Line a 9×13 inch baking pan with parchment paper.
Mix chocolate cookie crumbs with melted butter and press into the bottom of the prepared pan to form a crust.
In a saucepan, combine cherries, 1/4 cup sugar, water, and cornstarch.
Cook over medium heat until thickened, then cool slightly.
Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
Pour half of the cheesecake mixture over the crust.
Spoon cherry mixture over the top, then add the remaining cheesecake mixture
Swirl with a knife to create a marble effect.
Sprinkle chocolate chips on top and bake for 45 minutes, or until set. Cool completely before cutting into bars.
