Chicken Shawarma

Chicken Shawarma is a beautifully spiced, marinated grilled chicken dish that’s popular in Middle Eastern cuisine. Ingredients:

For the Chicken Marinade:

  • 2 lbs boneless, skinless chicken thighs (or breasts, if preferred)

  • Tahini sauce or garlic sauce (for drizzling)

Directions:

  1. In a large bowl, whisk together olive oil, garlic, cumin, paprika, turmeric, coriander, cinnamon, cloves, cayenne, lemon juice, yogurt, salt, and pepper.
  2. Add the chicken thighs (or breasts) to the bowl and toss until the chicken is fully coated in the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight, for maximum flavor.
  3. Preheat a grill, grill pan, or large skillet over medium-high heat.
  4. Cook the marinated chicken for 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is fully cooked.
  5. Remove the chicken from the heat and let it rest for a few minutes before slicing into thin strips.
