- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup white wine (or chicken broth)

For the Garlic Parmesan Rice:
- 1 cup long-grain rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- Salt and pepper to taste
Directions:
- Prepare the Garlic Parmesan Rice:
In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the rice and toast for 1 minute. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked through. Once done, stir in Parmesan cheese, season with salt and pepper, and set aside. - Cook the Chicken Scampi:
In a large skillet, heat olive oil over medium-high heat. Season the chicken slices with salt, pepper, and Italian seasoning. Cook the chicken for 3-4 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside. - In the same skillet, melt butter and add minced garlic, cooking for 1 minute. Pour in the white wine (or chicken broth) and lemon juice, scraping the bottom of the pan to deglaze. Let the sauce simmer for 2-3 minutes, then return the cooked chicken to the skillet, coating it in the sauce. Simmer for an additional 2 minutes.
- Serve the chicken scampi over the garlic Parmesan rice, garnished with fresh parsley.
