Chicken Scampi with Garlic Parmesan Rice

Ingredients:

For the Chicken Scampi:

  • 1 lb chicken breast, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup white wine (or chicken broth)
  • 1/4 cup lemon juice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

For the Garlic Parmesan Rice:

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • Salt and pepper to taste

Directions:

  1. Prepare the Garlic Parmesan Rice:
    In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the rice and toast for 1 minute. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked through. Once done, stir in Parmesan cheese, season with salt and pepper, and set aside.
  2. Cook the Chicken Scampi:
    In a large skillet, heat olive oil over medium-high heat. Season the chicken slices with salt, pepper, and Italian seasoning. Cook the chicken for 3-4 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt butter and add minced garlic, cooking for 1 minute. Pour in the white wine (or chicken broth) and lemon juice, scraping the bottom of the pan to deglaze. Let the sauce simmer for 2-3 minutes, then return the cooked chicken to the skillet, coating it in the sauce. Simmer for an additional 2 minutes.
  4. Serve the chicken scampi over the garlic Parmesan rice, garnished with fresh parsley.
