Chewy Pumpkin Cookies

Ingredients:

  • 1 cup pumpkin puree
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar (for rolling)

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add in the egg, vanilla extract, and pumpkin puree, mixing until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll dough into 1.5-inch balls and coat them in granulated sugar.
  7. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are slightly golden but the centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
