These Brownie Mix Cookies are a perfect cross between a cookie and a brownie, with chewy edges and a fudgy center. The rich, chocolaty flavor comes from the brownie mix, making them a quick and simple treat that feels homemade. Add some chocolate chips or nuts to elevate the flavor and texture, or enjoy them as is!
Ingredients:
- 1 box of brownie mix (any brand)
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- 2 large eggs
- 1/4 cup semi-sweet chocolate chips (optional)
- 1/4 cup chopped nuts (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine the brownie mix and flour. Stir until they are well blended.
- Add the eggs, vegetable oil, vanilla extract, and salt to the dry ingredients. Mix until combined, forming a thick dough.
- If desired, fold in chocolate chips and chopped nuts for added texture and flavor.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon or your fingers to help them spread evenly while baking.
- Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft. Be careful not to overbake, as the cookies will continue to firm up once they cool.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
