Ingredients:
For the Crust and Topping:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 tsp vanilla extract
For the Cherry Filling:
- 1 can (21 oz) cherry pie filling
- 1 tbsp cornstarch (optional, for thickening)
- 1 tbsp lemon juice
Directions:
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the softened butter, sugar, and vanilla extract. Mix until creamy.
- In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the butter mixture, stirring until a crumbly dough forms.
- Reserve 1 cup of the dough for the topping, and press the remaining dough evenly into the bottom of the prepared baking dish.
- In another bowl, mix the cherry pie filling with the lemon juice and cornstarch (if using) until well combined. Spread the cherry filling evenly over the crust.
- Crumble the reserved dough over the cherry filling to create a topping.
- Bake for 30-35 minutes, or until the topping is golden brown.
- Allow to cool before slicing into bars.
