Cherry Pie Bars

Ingredients:

For the Crust and Topping:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract

For the Cherry Filling:

  • 1 can (21 oz) cherry pie filling
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tbsp lemon juice

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the softened butter, sugar, and vanilla extract. Mix until creamy.
  3. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the butter mixture, stirring until a crumbly dough forms.
  4. Reserve 1 cup of the dough for the topping, and press the remaining dough evenly into the bottom of the prepared baking dish.
  5. In another bowl, mix the cherry pie filling with the lemon juice and cornstarch (if using) until well combined. Spread the cherry filling evenly over the crust.
  6. Crumble the reserved dough over the cherry filling to create a topping.
  7. Bake for 30-35 minutes, or until the topping is golden brown.
  8. Allow to cool before slicing into bars.
