Cherry Almond Cookies

Ingredients:

½ cup unsalted butter, softened

8 ounces cream cheese, softened

1 cup light brown sugar, packed

1 large egg

½ teaspoon salt

1 teaspoon almond extract

½ teaspoon vanilla extract

2 cups all-purpose flour

20 ounces maraschino cherries, drained and patted dry

½ cup white chocolate chips

Directions:

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Dough:

In a large mixing bowl, cream together the softened butter, cream cheese, and light brown sugar until light and fluffy.

Add the egg, almond extract, and vanilla extract, and mix until well combined.

Add Dry Ingredients:

Gradually add the all-purpose flour and salt to the butter mixture, mixing until just combined to form a dough.

Shape the Cookies:

Gently fold the maraschino cherries into the dough. Use a tablespoon or cookie scoop to drop small mounds of dough onto the prepared baking sheet, about 2 inches apart.

Bake:

Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and allow cookies to cool completely on a wire rack.

Drizzle with White Chocolate:

In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring between each interval until smooth. Drizzle the melted white chocolate over the cooled cookies.

Let the white chocolate set before serving. Store in an airtight container for up to a week.
