- 1.5 lbs baby potatoes, quartered
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup sour cream
- 2 tablespoons olive oil
- 1 tablespoon ranch seasoning mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 teaspoon smoked paprika (optional)
- Fresh parsley for garnish
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with olive oil, garlic powder, onion powder, salt, pepper, and smoked paprika. Spread them evenly on a baking sheet.
- Bake the potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly crispy on the edges.
- In the meantime, slice the smoked sausage and cook it in a skillet over medium heat until browned, about 5-7 minutes. Set aside.
- In a small bowl, mix together ranch dressing, sour cream, and ranch seasoning mix.
- Once the potatoes are done, transfer them to a large casserole dish. Add the cooked sausage and drizzle the ranch mixture over the top. Stir to combine.
- Sprinkle the shredded cheddar cheese evenly over the casserole.
- Return the dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.
