Cheesy Ranch Potatoes and Sausage

  1. Ingredients:
    • 1.5 lbs baby potatoes, quartered
    • 1 lb smoked sausage, sliced
    • 1 cup shredded cheddar cheese
    • 1/2 cup ranch dressing
    • 1/4 cup sour cream
    • 2 tablespoons olive oil
    • 1 tablespoon ranch seasoning mix
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and pepper to taste
    • 1/4 teaspoon smoked paprika (optional)
    • Fresh parsley for garnish
    Directions:
    1. Preheat your oven to 400°F (200°C).
    2. In a large bowl, toss the quartered potatoes with olive oil, garlic powder, onion powder, salt, pepper, and smoked paprika. Spread them evenly on a baking sheet.
    3. Bake the potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly crispy on the edges.
    4. In the meantime, slice the smoked sausage and cook it in a skillet over medium heat until browned, about 5-7 minutes. Set aside.
    5. In a small bowl, mix together ranch dressing, sour cream, and ranch seasoning mix.
    6. Once the potatoes are done, transfer them to a large casserole dish. Add the cooked sausage and drizzle the ranch mixture over the top. Stir to combine.
    7. Sprinkle the shredded cheddar cheese evenly over the casserole.
    8. Return the dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
    9. Garnish with fresh parsley and serve hot.
